This time around two years ago we knew a lot less about herring than we do now. We had also never encountered the Seb/Henrik double act, nor had we realised just how many people love open sandwiches in the UK.
It's been a real blast so far and we love getting up every morning to come to the Scandinavian Kitchen, whether its to make the Monmouth coffee we serve or if it's to help people get introduced to the wonders of Kalles Kaviar from Sweden.
Tomorrow, Tuesday 7th July, we'll be dishing out the cake and maybe wearing silly party hats too. We'll certainly be feeling happy and cheerful and ready for a lot of birthday hugs.
