For those of you who don't know what CheezDoodles are:  its a bit like Cheezy Wotsits - but much, much better - and they come in huge bags of 250g each.  Not those dinky little bags you get at the news agents, no no, these bags are MAN SIZED.

Focus on: Sausages in Jokkmokk

What a great place name, we said to ourselves.  We all want to come from a place called JokkMokk.

Sadly, we don't, but some people do (about 2,976 of them, actually, plus a few guests on weekends when Kalle's Auntie and Unle pop by for a bit of sausage and some tunnbrod).  Jokkmokk is a town in Northern Sweden where the winteres are long and hard but the summers are light and full of moonshine.

They also make sausages.  Very long sausages.

This week they beat their own record of the longest sausage in the world.  The old record was 80 metres long - but this year, they made a 100 metre long sausage.

That is one helluva hotdog, folks.

The hotdogs were made by the cool gang at this smokery.  Do pop in and have a bit if you get to their neck of the woods.

Remember the little penguin who got lost and ended up in New Zealand?  Well, after many donations from well meaning individuals all over the world to help fund his voyage, the little man is finally on his way back home to the south.

We’re working with some clever friends of ours to produce the first ever Scandi Kitchen adverts. It’s very exciting. We’re a bit stuck, though, because we need a few rather photogenic souls to photograph and, well, we’re having to admit that while we all feel beautiful on the inside, perhaps we don’t have what it takes to shine in print.

In particular, we are looking for a few ABBA’esque looking girls, a man who looks like Thor and someone who could pass for a sour looking Scandi crime detective (think Sarah Lund or Wallander).

Mad about food

A new big foodie event is taking place in Denmark this weekend, it’s called MAD about food – a whole island is set aside for this. It’s a bit like Roskilde Festival but for cooks and foodies. Wellies advised as it will probably rain – although Rene from we’ve-got-more-stars-than-anyone Restaurant Noma will be there swooning around and ensuring his personal rays of sunshine will shine on us earthlings.http://xurl.at/5nz

Rebekka worked on the autumn changes for our menu. Sebastian flicked his hair even more than usual in smooth and Swedish hair-flick manner (film to come next week). Bronte was concerned to discover that Richard Clayderman has recorded an ABBA tribute album. Moa got really into crayfish spirit and decorated the whole shop - and Jonas met his hero, Jan Hedh the Swedish Master Baker.

Who are you, anyway?

We do love our royals here at Scandi Kitchen.  In fact, we're pretty sure we'd recognise them all should they pass by.  Or would we?

Not so for the King and Queen of Sweden last week as they passed by a restaurant in Germany and fancied a spot of lunch.  The owner duly informed them that the restaurant was indeed full and perhaps they'd consider popping down the road to the local pizzaria for their lunch instead?

MAD about Food? Head to MadCamp 2011 in Denmark...

We simply, in a few words, love it.  Oh, and how clever:  'Mad' means food in Danish.  

Rene from Noma, along with many, many of his chums, have set up a big food festival in Copenhagen that takes place on 27th and 28th August 2011. It's huge.  It's, like, a whole island of just food (bring wellies).

The event is all about inspiration for food and trends.

Visitors will get to meet chefs from all over the world, eat at the food stalls, talk to a number of Denmark’s most ambitious farmers, look at grazing livestock and buy fresh, high-quality produce. The magnitude of the fruit and vegetable market will be larger than anything seen in Northern Europe before and feature wild as well as cultivated crops from the seas, woods, fields and beaches of the Nordic region.

Knowledge on subjects like soil quality, vegetation, hay and compost will be shared like never before. Workshops, food installations, demonstrations and food talks will abound – all organised by the enthusiasts, producers and experts behind some of the finest food experiences in our part of the world. 

If you like food to the point of obsession, this is probably where you want to head to this weekend.  It's the trainspotting event for food lovers - and that Rene, well, he's a bit of a dish too.

Don't worry, we won't tell anyone if you have a hotdog on your way home.   Your secret's safe with us.

Tickets cost DKR 200 - that is about £24 in today's money.

Cheap flights to Copenhagen via www.Norwegian.no and www.easyjet.co.uk.  These airlines fly from both Gatwick and Stanstead.   You can also fly from London city and Heathrow with SAS and although you pay more, you do get a free mint pastille and sometimes even a cup of tea.

Obviously, this is only funny if you have a good command of both Swedish and English.  

Bronte laughed so hard and then tried to buy one of these signs (a snip at £250 a piece - possibly because someone else found it funny too).

We wonder if Persil realised the nature of their advert when this was made.  In Swedish, for those of you who need a bit of translation, the sentence reads "Persil:  for all kinds of washing".

Back from holiday? Where’s our postcard? Welcome back to reality and the start of autumn. No more tanned waiters, no more Club Tropicana (where the drinks are free*) – but it IS the crayfish season and there is plenty of fun to look forward to for the next month or so: Most fun involves little red crustaceans and possibly a few friends who know the lyrics to Scandinavian drinking songs.

We’re so pleased that the entire collection of Swedish newspapers and magazines has stuff to write about for the next many years: Crown Princess Victoria of Sweden is pregnant and expecting a little prince or princess in March. This is bound to increase her popularity even more, especially in light of Knugen’s continued lack of popularity owning to a few kiss and tell biographies. We say name the kid Carola if it’s a girl. It’s fitting.

Ghost for sale

Fancy a house in Sweden?  How about a house on the Baltic island of Gotland where there's a lovely five-bedder for sale, a snip at just under £400K. 

There is an existing tenant, though, who isn't planning to move out any time soon in the form of a skeleton in the cellar.

The remains of the 800 year old male most likely stem from Russia - as the house is built on top of the ruins of an old Russian church.

The estate agents says the skeleton looks very peaceful and is unlikely to start haunting - and the hosue is ready to move into.  And we should trust his word on this, because everybbody knows estate agents always speak the truth.

Closing early today August 9th 2011

Hello

Due to the London troubles these past few days, we have decided to close at 16:00 today to allow our team to get back to their homes safely in case any more troubles flare up.  Safety is not to be messed with and we prefer not to take chances when it comes to the safety of both team and customers.

Welcome to Cucumber season. This time of the year, when most of Europe are sunning themselves and chatting up charming waiters, news stories reach an all time low. In Denmark, we refer to this as “Agurketid” meaning Cucumber Season. In Sweden it is called ‘nyhetstorka’ (news drought).

This is the time of year you are most likely to read stories about UFOs over Hackney, world record burping attempts and stories about killer penguins.

A Swede attempts to split the atom...

You have to give this guy ten out of ten for trying. A Swedish chap decided to turn his flat into a nuclear reactor and spent six months playing around with uranium in his kitchen trying to split the atom before “checking” with the authorities that it was indeed legal to do so.

Continuing the Speedo debate: man questioned by police

A man in his thirties practising yoga on a lake beach in Falkträsket in Northern Sweden was questioned by police over his choice of clothing.

The man in question was wearing a simple thong.  Complaints from other beach dwellers prompted the police to be called who then went to the beach in full uniform, untangled the thong wearing yoga man, took him away for a chit chat and then let him go back to pack up.

The police have later added that "perhaps it was unfortunate that they sent fully uniformed police" to deal with this situation.  Quite.

Had he been wearing speedos, we're sure it would have been a totally different matter.  Speedos are cool.  So say the Belgians.

Crayfish Season 2011 has arrived

How to celebrate the crayfish season the Swedish way

Every year, the Swedes and Finns celebrate the crayfish season in August and September.  It is traditionally the only time you should host crayfish parties.  This used to be the law, now it is simply just traditional to do it only during this time.

A crayfish party is simple. You first of all need to invite some friends.  Secondly, you need to get hold of some crayfish that have been cooked in a dill brine.  Add to this some strong Scandinavian aquavit and some “fillers” (because you need fillers when drinking aquavit and eating tiny crayfish) and you’re set to go.  Bibs are advisable – hats are fun.

To explain some of the components in more detail:

The crayfish – by this most Swedes will mean the pre-cooked packets of crayfish that come frozen.  Of course, some people (but very few) bother to go out on the lake at dusk and catch the little buggers, then cook them in brine and leave them for flavours to develop over 24 hours... it is a lot of work.  One person will eat around 500-700 grams of crayfish on their own (around 10-14 crayfish) so you’d have to catch a lot of fish to make a big party.  If you get the frozen packs, all you need to do is defrost in fridge overnight, then pop the cold, defrosted crayfish on a tray and you are simply ready to go.  

The aquavit – is a strong grain based alcohol popular all over Scandinavia.  Serve super chilled in shot glasses.  The old saying goes “one shot for each claw” but really, that would make you unable to have any conversations for a few days, so best stick to a moderate amount.  Supplement with a good Scandinavian lager such as Tuborg or God Lager.  We recommend any of the aquavits from any Scandi country – from the Danish Aalborg Taffel to the Swedish OP Anderson or Hallands Flaeder...  if you are having a party with lots of Scandinavians, plan for ¼ bottle per person minimum.  Non Scandies can get away with less.

The “fillers” – most popular filler is a big slab of the amazing Vasterbotten cheese along with a selection of crisp bread and perhaps some crusty bread too.  Some people like to serve boiled potatoes or salad – and some like to start with a big bowl of pickled herring.  A wonderful idea for a filler is to also make a Vasterbotten Paj – a quiche made from Vasterbotten cheese, a mature strong Swedish cheese.  We serve this with romsas – a dressing made from 1 jar of kaviar (lumpfish roe) mixed with 200 ml of sourcream.  Simple.

Hats and bibs – because it looks fun and festive.  The bibs are pretty practical although any kid of paper bib will do, except the baby kind obviously.

Sing Song – you must sing songs, ideally in Swedish.  Don’t worry, after your 2nd shot of aquavit, you will be fluent in Swedish anyway, even if the closest you’ve ever been to Sweden is owning flat packed furniture.  You can download our little leaflet of songs right here LINK TO COME.  We have chosen a mixture of Swedish and English songs. 

A crayfish party is not a short event.  It takes hours and it is important you pace yourself or else you end up being the person who fell asleep in the garden shed before 9 pm.  Gather your friends, enjoy some delightful food where the crayfish is your centrepiece – and sing some songs.  That really is what it is all about.

What you need for a Crayfish Party

CRAYFISH – budget 500-700g per person (,ore if mainly Swedes attend, less if people are not used to crayfish, they will not eat as much).  So, for ten people you need between 5 and 7 kg, depending on how greedy you all are. 

Vasterbotten cheese – get a big slab of cheese, place it on the table with a cheese slicer and some butter.

Crispbread – we recommend Leksands as it looks amazing on the table and people can break off pieces as they need it.  Another good one is Wasa Sport or Falu Ragrut.

Aquavit – a traditional must.  OP Anderson or a selection of 10 Swedish mini bottles is a nice choice.

Vasterbotten Paj – make your own using the Vasterbotten cheese - or pre-order a large pie from us (min 48 hours notice) for £19.95 (16 slices). Mail iwantfood@scandikitchen.co.uk to pre-order.

We also suggest some nice Swedish herring to start with – the ABBAS mustard herring is very nice – and perhaps a jar of the French onion herring would work well.

Other interesting Swedish cheeses that would work well if you want to extend your cheeseboard would be PRAST OST (mature) or the creamy Asada ost – mild but full of flavour.

Speedos: Hot or not?

Some of us have just got back from a bit of a break in Southern Europe.  There we encountered not only half of Holland (we went camping, along with 92% of the Dutch population) but also an alarming proportion of men wearing Speedos.  As in, they were not by the pool.  They were driving their cars (Speedos only), enjoying the sun outside their tents (Speedos only) and shopping in the local market (Speedos only).  Speedos were originally invented back in 1910 for sports swimmers, not Dutch/French/Belgium campers, but now they are enjoying a wider audience it seems.  Nice.

We figure this means that Speedos are well and truly back on the map.  Some might say they never went away in the first place.  We say bring the Speedos back to the Scandinavian shores too.

While you consider the thought, here's a few photos to get you all excited about the prospect of seeing Speedo clad men walking around Sainsburys in Fulham.

Danish band TV2 in London 11 Nov 2011

The Danes at Scandi Kitchen can hardly contain their excitement:  the Danish band TV2 are coming to London and will play a gig at Shepherd's Bush Empire on 11th November.

TV2 is as Danish as the little mermaid and clapping hats.  Every man, woman and child can sing along to the songs. 

Some of us have already got our tickets and are planning to wear clapping hats and tattoo our foreheads with the words "Steffen styrer".  Quite a few of us are planning an impromptu Danish Gathering at the Defector's Weld pub before the gig.  Maybe see you there?

Norway. Words are not enough.

It has been a few weeks since the shootings in Norway.  Still we are speechless and there are no words that can express how we feel – or just how much our hearts bleed for our friends in Norway who suffer for their losses. 

Norway is a small country and a peaceful one at that.  Whether directly or indirectly affected by this act of mindless and horrific violence, the entire nation stands in shock and disbelief. 

There simply is nothing one can say to even begin to comfort.  We want all our Norwegian friends to know that we too mourn with you and more than ever, respect and champion your beliefs in democracy and peace. 

Thanks also to so many of you who have written to us here at Scandi Kitchen, offering your sympathy and support.  We know it means a lot to many people.   We have forwarded your mails where appropriate and we have shared your thoughts.

One of our friends, Aidan, has in the light of this tragedy raised an impressive £800 in solidarity for the Norwegian Refugee Relief who carry out excellent work front end in Somalia, Kenya and Ethiopia.  What an amazing feat, Aidan - we salute you and we hope many others join you in this.  If you want to show your support, feel free to donate to this cause and in turn help some of the suffering in Africa in this horrific drought that kills a child every 6 minutes.  You can donate in solidarity for Norway to Africa here http://www.nrc.no/donate

And the "not so clever" award of the week goes to...

_54420940_meltdown Sweden.  Or rather, one Sweden from the south (Angelholm).

He decided to try and aplit the atom - in his kitchen.

Ensuring people would understand that these experiements were not malicious in any way, he even kept a blog about his ongoing kitchen science projects.

At one point, having had a bit of a meltdown (the experiments, not him. Ed) he got in touch with the local authorities just to double check that was he's been doing has been 'all legal'.

It wasn't so, said the authoroties.  Richard Handl said that he had the radioactive elements radium, americium and uranium in his apartment in southern Sweden when police showed up and arrested him on charges of unauthorised possession of nuclear material.

Mr Handl has promised to stick to books from now on and no more trying to make a nuclear reactor in his ikea kitchen.
